There are several applications that I do not use. Can I just drag them to the Trash? I would not want the action to mess up the Update application because it could not find all the applications that need to be updated.

You cannot uninstall the individual Office apps, but if there are icons for those apps visible on your Desktop screen, you can delete them if you do not use the associated apps.

My Office applications are separate standalone. I don’t know if this is simply a function of the Mac version or not.
To uninstall Microsoft Word or Excel on a Mac, users can drag the application icon from the Applications folder to the Trash, or use the Command-Delete shortcut while the app is selected. They may also remove the app from the Dock by control-clicking the icon and selecting "Remove from Dock".
