This download appeared on MSDN a couple of months back: Intellisense files for Visual Studio Tools for Office. Despite the title of the download these files can be used in any .NET Office System development regardless of whether you are using VSTO or not. The files work in Visual Studio .NET 2003 and Visual Studio 2005 and provide intellisense support for the Office PIAs.
